For me, there are three that stand out:
1) On a contract job on W. 30th in Manhattan, happened to glance out the window one winter day - a Ferrari F40 on a flatbed headed east. No question what it was;
2) Walked out of a different job onto 6th Avenue and heard an ungodly sound, like canvas tearing - a black (or very dark blue) Veyron moving very quickly up the street;
3) in a taxi, headed down Broadway, late for work - then this lovely '59. Could not get a decent photo, the guy told me it was pretty much his daily driver.

1.) Spotted two Lotus Elites just chilling out in a Dogpatch parking lot.
2.) R34 GT-R in Oregon
3.) Bugatti Veyron Gran Sport driving away from Infineon Raceway.

1. New Porsche 911 Turbo S going past the plaza where my local grocery store is.
2. Lotus Exige going down the exact same road as the 911.
3. Acura NSX going down the road adjacent to the road the 911 and Exige were on.
I think it's safe to say that if I want to see super cars, I need to stay around that area.

And a Ferrari Daytona Spider, plus two Aston Martin DB5s. I may also have seen a McLaren F1, but that has yet to be confirmed.

This one this weekend. Also I once saw a Cobra and a Ferrari heading down the road in opposite directions cross train tracks at the same time, that was pretty cool.

Saw an F40 driving in the rain near Greenwich, saw the crashed Enzo the other week in Stamford and last week saw an Alfa Romeo 8C on 684.

A Jaguar XJ220 leaving the Road Atlanta infield. I've also seen a Tucker Torpedo and a one-of-a-kind Triumph concept (I forgot the model name. It was a TR-something, though) but both of those were parts of events so they don't count. The Jag was just driven by a spectator, so it takes the cake.
Oh, and I saw a Bugatti EB-110 in Germany.

if we're talking exclusively in the wild, out of the blue sightings, I'd say a noble M400 that pulled up next to me at a stop light. I've also seen a Mercedes SLR at a four way stop and followed a Plymouth Superbird onto the highway.
If we're talking all time, check the Concours d'Oppogance tag highlighting my trip in August! Vectors, Tuckers, Gt40's, Bugatti's, F1's, and Gullwings!

If we're talking in the wild and not car shows/museums, I'd say the two most significant cars this farm-raised Texas boy has seen are (1) the Aston Martin Vanquish that was sitting outside the Oasis restaurant on Lake Travis when I was in high school and (2) the Ford GT I saw driving around Temple just a few months ago.

Seeing a purple McLaren F1 in the wild in Frisco, CO. Not in a garage, or at a show. The guy was just running errands in the thing.

Most interesting for me was one day just out walking the dog by a fairly secluded unpopular local lake. Usually when I went there there'd be maybe one other car. My wife wasn't feeling well so she decided to sit by the car and read while I walked the normal loop. Came back and she told me "Some neat older car pulled through while you were gone...you missed it". Tried to get her to describe it but could only gather it was something pre-war and American based on her description.
Pack up and head off back down the fairly well maintained gravel road. About a quarter of a mile along I spot a pristine 1936 Lincoln model K vert. Stop and chat with the old guy driving and it turns out he'd been taking trips to this lake every so often for 50+ years and was about to give up driving and move into an assisted care place and this was his last trip out there so he figured why not take out his prized possession that he'd been only driving to shows for decades.
Fun experience and nice owner.

Yup. I was having lunch and I heard a screeching bellow from around the corner and watched it shoot past the window. So I finished up quick and went to the local supercar dealership - of course it was sitting there.

Forgot about this one - car just like this one, same color, parked in SoHo. Guy leaning against it talking about how great it was with a few other guys. Gorgeous woman in the passenger seat - she smiled at me and mouthed the words "It's mine."

Nice - reminds me of walking down Fifth Avenue, which was closed because of, I think, the German Day parade. Old Beetle, owner talking to a cop, and I asked him if it was a '52. It was, and they were both surprised I knew.

that's a 58 Corvette, the chrome suspenders in the trunk were one year only.
At a show last year spotted an documented all original 70 Chevelle SS 454 (LS5) with factory three on the tree. Turned out to also be a one owner car
98% in older chevy's if you had bucket seats and a console you had a floor shift. Well I thought it was a given but I was wrong. While restoring a 65 impala SS found a guy who sells parts so went out to his place and he has 35-40 65-66 Chevy big cars(caprice,impala,biscayne,bel air) one of there was a factory 65 SS impala with bucket seat and console but factory column shift. There was a special block off plate in the console. Never have seen anything like that before or since

TVR Tuscan on the Freeway between Albuquerque and Santa Fe. It was like seeing a UFO a non us market car in the middle of nowhere desert land. It turns out it was part of one of the Gumball Rally.
MAZ-73100 SCUD TEL Launcher. On the freeway in Albuquerque on a huge flatbed not sure if it was going to the Littlefield Armor collection in CA or Fort Irwin NTC.
Bugatti Veyron Beverly Hills Lamborghini. I was @ UCLA with a family friend helping him while he got cancer treatment and had to gas up the rental car and next door was Beverly Hills Lambo dealer and in the showroom window was a Veyron.

Easily the 250 LM or GTO that was at Lime Rock Park last month. I also saw an F40 parked in a showroom on the automile in Massachusetts. Rare for me to see, but a new 911 Targa was at Lime Rock.

This is sorta silly. I was somewhere in central London a few years ago, it's been too long to remember where exactly. Heard something... different... coming up out of an underground parking garage. A stunning black '67 Mustang. I like to think it was Hamster, but I wasn't able to see the driver.

We were in London in late 2009 - I was surprised how much exotic iron is driving around compared to NYC, where I live - Aston, 911, Aston, Bentley, Rolls, Rolls, 911, Aston ... on and on. What surprised me? The Brits can get Alfas, yet I saw only one. In 9 days. One.

After living in Chicago for 5 years, and also being up at Road America a lot, I'm sorta jaded to seeing rare cars.
I know a guy with a F40, and he tracks it regularly. I've seen it like three days this summer. He street drives it, and also had it at a local car show.

Wow - what they must have gone thru to get it certified here ... those cars have no airbags, if I recall correctly. I should drop by and take some photos.
